This unit is only available to students enrolled in D301 H315 and H318 or
D304, D311, D321, D331, S320 students completing the Food Science major (MJ-S000098).

Other students who would like to enrol in this unit must submit their request to Student Adviser in Student Central. Enrolment quotas apply.

Prerequisite:

For students enrolled in S320, D304, D311, D321 and D331: Must have passed SLE155 or  SLE133.

For students enrolled in D301 H315 and H318: Must have passed SLE133 and Must have passed HSN104 or SLE155.

Corequisite:

Must be enrolled in or have previously successfully completed HSN010

Typical study commitment:

Students will on average spend 150 hours over the teaching period undertaking the teaching, learning and assessment activities for this unit.

This will include educator guided online learning activities within the unit site.

Content

This unit provides students with an understanding of analytical methods used for measuring the chemical composition of food as well as the management systems used by the food industry to ensure consistently high-quality products. Specific topics covered include representative sampling, data analysis and presentation, analysis of macro- and micro-nutrients, measurement of additives and contaminants in foods, quality assurance systems including standard operating procedures and total quality management.

REGARDING PRACTICAL CLASSES

Please note that it is a requirement of entry into the laboratory that you have completed the relevant pre-laboratory quiz, and received a passing mark (≥80%). These quizzes contain background information on the methods that we will perform, videos showing hands-on versions of what we will do in the class, and also quiz questions relating to this content and videos. Please be aware that these pre-laboratory quizzes can take up to an hour to complete, and that you must bring a copy of your passing results to the laboratory in order to enter the class.

Note that attending laboratory sessions and satisfactory laboratory performance contributes to the assessment of the corresponding laboratory report. If you cannot attend a laboratory class, you must contact your Unit Chair immediately, with appropriate documentation (medical certificate, etc.) and reason as to your absence, to see if attendance at an alternate practical class may be possible. Unless prior arrangement has been made, late arrival (more than 15 minutes after scheduled starting time) is not considered satisfactory, and you will not be permitted to attend the class.
