The work undertaken in the food sensory labs at the Centre for Advanced Sensory Science (CASS) keeps us at the forefront of sensory science research. It also provides students studying a food and nutrition science degree with industry-relevant and hands-on skills.
The sensory evaluations you'll do as part of your degree take place in the food sensory labs at CASS. The facilities include a sample preparation kitchen and 17 self-contained booths for computer data collection.
Our world-renowned researchers and research students work across a number of topics, including flavour analysis, salt in food and satiety (the feeling of fullness).
